Crazy Easy Blueberry Muffins – Only 3 Ingredients

They say that variety is the spice of life and that totally applies to your meals too. You don’t have to get stuck in a rut to eat healthy, delicious food everyday. These crazy easy blueberry muffins make it easy to add a treat to your breakfast and snacks without weighing you down with excess sugar!

Lately, I’ve been in full prep mode for back to school. Since mornings are my least fave and least productive time of day, that’s where I’ve focused on our freezer cooking. I actually made these super yummy blueberry muffins for me to munch on in the morning but the kids loved them so much I had to share.

These babies were gone in less than a week between the five of us. If you have a big family or simply want to stock your freezer for longer, I recommend making a double batch. Toss one batch in the freezer while keeping the second batch in the fridge for easy access.

Easy Blueberry Muffins Ingredients

Step 1

First, preheat your oven to 350° Fahrenheit and prep your muffins pan by spraying them with non-stick cooking spray.

Step 2

Next, add your pancake mix to a large glass mixing bowl.

Then add your unsweetened apple sauce and mix until well-combined.

Lastly, gently fold in your blueberries until they are mixed throughout the batter.

Fill your muffin pans with batter about half-full.

Bake at 350° Fahrenheit for 20 minutes.

After you remove the muffins from the oven, immediately turn over onto a cooling rack and allow to cool at least 5 minutes before eating.

Storing Your Blueberry Muffins

Store your muffins in a resealable plastic bag for up to a week in the fridge. Freeze in a freezer-safe bag or container for up to 2 months. Warm up frozen muffins for 1 minute in the microwave when ready to eat.

Although all of my kids like painting their nails, my daughter has an uncanny knack for finding my nail polish no matter where I store it. Our bedroom carpet looks like a Pollock painting more than it does a floor at this point. Since hiding the polish wasn’t helping, I decided to take a different route.

I made her nail polish that is just for her and is washable so it’s way easier to clean up spills. Now she can paint her little fingers to her heart’s content and I don’t have to worry. It’s also kept her from sniffing out mine to play with. Pretty much a win-win, if you ask me.

This nail polish also peels off so no need for acetone remover which can be hard on tiny nails. She can paint and design, let it dry, pull it off, and do it all over again!

DIY Nail Polish Materials

Step 1

First, clean your old nail polish bottle. Pour out any polish remaining in the bottle then fill with nail polish remover and shake vigorously. Pour out the solution and repeat until the bottle is empty.

Next, make sure the brush for the bottle is clean. Use your fingers to massage nail polish remover throughout the bristles until they are clean.

Step 3 (Optional)

Remove the labels from your nail polish bottle.

Step 4

Set your bottle and brush to the side to dry.

 

Glue in Small Plastic Bowl

Step 5

Then add 2 tablespoons of white liquid glue to your small plastic bowl.

Step 6

Mix in 1 teaspoon of liquid dish soap.

Next, crumble the eye shadow into the glue and soap mixture. You want to crumble it into powder so it is as small as possible. Large clumps are harder to break down during mixing.

Lastly, mix the powder eye shadow into the glue and soap until well combined. Make sure that there are no large clumps of shadow in the mixture.

Now place your funnel in the dry nail polish bottle and carefully full the bottle with your mixture. Stop below the spout of the bottle to allow space for the brush when you put the lid on.

Finally, screw on the cap and use as normal nail polish.
