While most of the world is counting down the days until they can pick up a PSL at Starbucks, I have a different pumpkin fave for the season: the Black Pumpkin Coffee from Dunkin Donuts. It’s seriously delicious even if I always get a look from the cashier when I order it black.

Even though I’m not getting a PSL, I’m still whipping up some pumpkin spice deliciousness at home. First up, surprising the kiddos with these awesome pancakes. They are totally filling and they freeze, making them a super easy hot breakfast on school mornings. Apparently they’re great frozen too because that’s how my 10 year old prefers them.

Pumpkin Pancakes and Syrup on a Plate

Pumpkin Spice Pancakes Ingredients

Step 1

First, mix all of your dry ingredients in a large mixing bowl. A whisk works best for getting the seasoning throughout.

Step 2

Next, add in your remaining ingredients and mix until thoroughly combined. I recommend using a wooden spoon for this step. You can use a whisk but it takes a lot more upper body strength than I think cooking really needs.

Step 3

Then heat a pan over medium heat. I recommend spraying it with nonstick cooking spray but that’s totally optional.

Step 4

Once your pan is heated, pour 1/3 cup of batter into your pan. Cook it on medium heat for 1.5 minutes.

Step 5

Then flip your pancake and cook for an additional 1.5 minutes.

Step 6

Transfer your finished pancake to a plate and repeat until all of your batter is cooked.

This recipe makes about 26 pancakes and 2 pancakes is a serving size.

To Freeze:

Put in gallon freezer resealable bag and store in freezer for up to 3 weeks. To heat up froze, place 2 pancakes on a microwave safe plate and microwave for 90 seconds.

Although these pumpkin spice pancakes are crazy easy and delicious, do yourself a favor and get a griddle to cook them on. I don’t have a griddle anymore and cooking one at a time takes a while. Once you get the entire batch made, they’re super quick and easy in the morning. Feeling adventurous? Give them a try frozen and save yourself a step in the morning. Maybe my kiddo’s onto something.

Easy Pumpkin Spice Pancakes

Ingredients

  • 6 Cups Pancake Mix
  • 3 tsp. Pumpkin Pie Spice Seasoning
  • 1 tsp. Ground Cinnamon
  • 15 oz Can Pureed Pumpkin
  • 3 Cups Applesauce
  • 2 Egg
  • 3 Cups 2% Milk

Instructions

For the past month, I’ve been basically stalking the Dollar Trees in my area hoping to find some of those glittery branches they have every year. While I haven’t seen those in store yet, I have found a ton of other inspiring items. I mean, do you ever leave the dollar store without buying at least a couple of items?

Lucky for you, my loss is your gain because it means tons of awesome new Halloween projects like these easy-to-make colorful Halloween jars. They are so much fun and totally fit with the fun and non-spooky theme I’m loving this year. Even better, the only items you have don’t already have in your craft stash are the napkins and possibly the cylinder vase making the entire craft only 2 bucks! I can’t think of a better deal than that!

Don’t worry. I’m going to keep hunting those sparkly branches, because I have a super fun idea for them. Until then, enjoy this latest craft project for your Halloween decor!

Step 1

First, clean you vase and jars and allow them to dry.

Next, cut one napkin so that only the picture remains.

Then measure it around your vase and fold the excess so that there is a slight overlap at the ends.

Next, cut at the fold you made.

Cover your vase in a coat of Mod Podge and begin attaching your napkin.

Continue until your napkin is completely wrapped around your vase.

Further secure the napkin to the vase by covering the outside of the napkin with another coat of Mod Podge. Set your vase aside to dry.

Next, cut out only the vampire from a napkin. Keep as close to the outline as possible when cutting.

Attach the vampire to one small jar using the same method you did on the vase.

Step 10

Again, go over the vampire with a second coat of Mod Podge and set the jar aside to dry.

Lastly, cut out the ghost and bat from the same napkin that you cut your vampire from. Again, make sure that you trim all that extra orange from around the edges.

Then attach the ghost and bat to the 2 small jar with Mod Podge. Cover the outside of the ghost and bat with Mod Podge too and, again, allow it to dry.

Once your fun and colorful Halloween jars are dry, put some electric tealights in and use them as luminaries in a vignette on your mantle for the season. You can also fill them with candy and flowers (as I did) to create a festive and practical centerpiece for your dining table. I have always had a lot of purple in my Halloween decor. It always seemed to add a richness to the overall look that regular orange and black didn’t. On top of that, I’m a Bengals fan so I see orange and black and think of football (or my high school colors) not Halloween. When you add in the purple, it instantly elevates it to something more bewitching, I think.

In addition, I didn’t want to do anything super scary. While I love scary movies, gore, and creepiness, my 6 year old daughter suffers from pretty bad nightmares and I don’t want to add to that. There will be plenty of time for super spookiness when the kiddos are teenagers. Until then, I’m embracing the colorful candy side of Halloween with super fun projects like this pompom pumpkin Halloween sign!

Thankful and Blessed Wooden Pumpkin Sign

Step 1

First, you have to take everything off of your wooden pumpkin. This includes the tags and any embellishments on it.

Step 2

Next, separate the colors of pompoms you need from the assortment mix. I used black, white, lavender, green, and orange.

Step 3

Then add a thick line of tacky glue to the outer edge of your pumpkin and cover it with pompoms.

Next, add lines of tacky glue to the 2 curved lines near the center of the pumpkin. Again, cover them with pompoms.

Once you have your pompom lines outlined, add pompoms to fill in the rest of your pumpkin. Only work on one third section at a time. This maintains the shape of the pumpkin so that you still get that illusion of sections like a real pumpkin has.

Step 6

Continue adding pompoms to your pumpkin until it is completely covered in pompoms. Do not cover the stem.

Set your pumpkin aside to dry and paint your wooden word “BOO” with the glittery neon yellow paint.

Step 8

Set your wooden word to the side to dry and take the time to make a bow from your colorful ribbon. I folded one piece of ribbon to create the bow part and added a second piece of ribbon for the ends. Then I secured it all by tying a 3rd piece of ribbon around the center of the first 2.

Step 9 (Optional)

After your painted wooden word has dried, add a second coat of glittery yellow paint if desired. This makes it more vibrant especially since you aren’t sealing or treating the wood in any other way. Again, set it aside to dry.

Once everything is dry, glue your bow to the base of the stem on your pumpkin with hot glue.

Lastly, glue your painted wooden word to the bottom right corner of the pumpkin with hot glue.
