Crunchy and Spicy Baked Cajun Chickpea Snack

Sometimes eating healthy sucks. There. I said it. It is so much easier to rip open a bag of Doritos than it is to cook or slice up vegetables. That’s why it’s so important to make healthy snacking as easy as possible. This crunchy and spicy baked Cajun chickpea snack does just that.

Admittedly, I don’t have all day to work in the kitchen. What mom does (unless she is a professional chef)? That’s why I love easy and hands-off recipes.

You’re a busy mom and you have stuff to do. That shouldn’t limit your food options to pre-packaged junk all of the time. Besides, wouldn’t you rather waste empty calories on a glass of wine than cheese puffs? Heck yeah, you would!

 

Cajun Chickpeas in Glass Jar

Baked Cajun Chickpea Snack Ingredients

Step 1

First, preheat your oven to 400° F.

Step 2

Then, strain and rinse your chickpeas in a small colander.

Next, dump your strained chickpeas onto some paper towels and gently pat excess moisture away.

Step 4

Add your chickpeas and Cajun seasoning to a small mixing bowl and mix until the chickpeas are coated.

Then place your coated chickpeas to parchment-lined baking sheet in a single layer.

Step 6

Bake in the oven at 400° F for 30 minutes.

Step 7

Next, open your oven and stir the chickpeas on the baking sheet.

Step 8

Then bake your chickpeas for another 30 minutes.

Step 9

Again, open your oven and stir the chickpeas on the baking sheet. Also sprinkle them with salt at this time.

Step 10

Return to the oven for another 15-20 minutes.

Lastly, remove from the oven and allow to cool on the baking sheet completely before storing.

This baked Cajun chickpea snack is so easy to make. Aside from occasionally stirring it requires little participation on your part. Once it has cooled, separate it out into snack bags for healthy and convenient snacking anywhere. Even better, the spicy kick gives you that extra little oomph to wake you up and keep you energized. I think every mom could use more of that in her life, don’t you?

Spicy Baked Cajun Chickpea Snack

Spicy Baked Cajun Chickpea Snack
Prep Time 5 minutes
Cook Time 1 hour 15 minutes
Total Time 1 hour 20 minutes

Ingredients

  • Two 15.5 oz. Cans of Chickpeas (Garbanzo Beans)
  • 2 tbsp. Cajun Seasoning
  • Pinch of Salt

Instructions

  1. First, preheat your oven to 400° F.
  2. Then, strain and rinse your chickpeas in a small colander.

I am a serious planner addict. I loved planners even back in high school when they were mandatory. Even then I covered them in stickers and pictures. They weren’t just a way to organize my life, they were an expression of creativity.

For the past 5 years or so, I have been a loyal Happy Planner user. I love the customization, the accessories, and the fact that I can create my own printables that cater to my lifestyle and planning needs.

I still love the Happy Planner but being on the go more has made me realize how rough I am on my planners. Those little discs simply don’t hold the pages together well for me anymore. Now, I’m trying out new planners to see if I can find one I like that holds up to my busy lifestyle. If you’re looking for the perfect planner for you, I hope my search and honest reviews save you time and money.

Does It Help You Reach Your Goals

Out of the 12 goals I set for the month of July, I reached 8.5 of them. That’s pretty spectacular in my opinion. (The .5 is my weight loss goal which I knew going into the month would not be my top priority. I set a goal of 10 pounds and only lost 6.)

The planner does help you reach your goals but like anything, it doesn’t work unless you do. One thing it doesn’t do is give you a strategy for reaching your goals. It gives you a fantastic way to organize all of your goals but no real guidance. Once you organize your goals, my Monthly Goal Setting Planner will help you navigate your way to those goals.

Overall, my Recollections Goal Getter planner review is positive. If you already have an idea of how to break down your goals into bite-sized chunks to complete, it is excellent for organizing them. Again, my favorite addition is the vision board right there in your planner. It makes it easy to reference and reinvigorate yourself when the goal getting gets tough.

Next month I’m trying out the new Living Well Spending Less planner (it doesn’t get released until the end of this month). It also promises some big goal motivation and planning so I look forward to sharing that with you!
