In case you haven’t figured it out, we’re big on chicken nuggets in this house. I blame it on being such a picky eater growing up. Going out to eat with friends or family was stressful for me because I pretty much didn’t like anything except fruits and vegetables. Luckily, I always like chicken nuggets and chicken tenders. They always come without stuff on them so it’s hard to mess up the order and almost every restaurant has them.

Even though I’ve definitely expanded my tastes as an adult, I still have a soft spot for these breaded yummies. Instead of going for the frozen kind in the stores, I’ve taken to experimenting with different flavors and breading. These delicious barbecue chicken nuggets are the latest awesome creation from these experiments!

Barbecue Chicken Nuggets Ingredients

Step 1

First, preheat your oven to 375° Fahrenheit and line a baking sheet with parchment paper.

Step 2

Next, prep your chicken breasts by slicing them into medallions. Set your cut chicken pieces aside.

Tip:

Once your chicken is sliced, crumble all of the chips in your bag of Grippos until all of them are small pieces for breading. Pour them onto a dinner plate.

Step 4

Then whisk your eggs in a small glass bowl.

Now coat a sliced piece of chicken in the whisked eggs.

Step 6

Then dip the coated chicken in the crushed Grippos and cover it completely. Place chicken piece on your parchment lined baking sheet.

Step 7

Continue coating and dipping your chicken pieces until your baking sheet is full.

Step 8

Bake your chicken nuggets at 375° Fahrenheit for 20-25 minutes.

Step 9

Remove from the oven and serve with ranch dressing for dipping!

Cook Time 20 minutes
Total Time 35 minutes

Ingredients

  • 4 pounds Boneless, Skinless Chicken Breast
  • 1 Bag of Grippos Potato Chips
  • 5-6 Eggs

Instructions

  1. First, preheat your oven to 375° Fahrenheit and line a baking sheet with parchment paper.
  2. Next, prep your chicken breasts by slicing them into medallions. Set your cut chicken pieces aside.
  3. Once your chicken is sliced, crumble all of the chips in your bag of Grippos until all of them are small pieces for breading. Pour them onto a dinner plate.

Notes

If your chicken breasts are very large, cut them in half longways before slicing into medallions.

My mom has actually been making this for me for years because it’s a fast and simple meal that can be thrown together easily. My papa and I seriously can’t get enough of it. Even though she has always told me how easy it is to make, I never bothered doing so until now. We usually stick with a basic meal plan that doesn’t change much from month to month.

Unfortunately, as my kiddos grow, so do their very unique tastes. It was time to change it up a little so I decided to surprise them with this deliciousness. I was rewarded with cleaned plates and requests for seconds! Not bad for a mom of 3.

Since it was such a hit, I knew I had to share the recipe with you. Don’t worry about the wine in the dish. All of the alcohol cooks off when you boil the sauce. This is a totally family-friendly dish that everyone will love.

Tip:

Garlic White Wine Seafood Pasta Ingredients

Step 1

First, cook your angel hair pasta according to the package directions.

While your pasta cooks, mince your garlic cloves and finely dice your red onion.

Step 3

Next, prepare your seafood by pulling the tails off of the shrimp (if desired) and roughly chopping your imitation crab meat.

Step 4

Once your pasta has finished cooking, strain it and set it aside.

In the same pot that you cooked your pasta in, saute your minced garlic and diced onions in melted butter until the onions are translucent.

Admittedly, I love Lunchables just as much as the kids do. I’ve always preferred the off-brand but let’s be fair, is meat and cheese topped crackers ever a bad idea? Not in my book. With 3 kids in school this year, however, it’s simply not in the budget to buy Lunchables for the kids to pack each day. These homemade lunchables are the perfect solution!

They’re super easy to make but still totally delicious and best of all they’re budget-friendly. While peanut butter and jelly is also great for your budget, the kiddos get tired of it after a while. These let you mix it up without ruining your grocery budget.

 

Homemade Lunchables

Easy Homemade Lunchables Ingredients

Note: You also need divided lunch containers for these because you want to keep the components separated for freshness. If you mix it all together then the crackers will get soggy.

Step 1

First, lay out your divided lunch containers with the lids off. I like to do this assembly line style because it saves time and energy.

Step 2

Next, add 6 crackers to each container. You can add more if you have older kids and don’t think that 6 will be enough.

Step 3

Add 6 pieces of salami to one of the divided areas of each container.

Step 4

Then cut your cheese slices into 4th’s and add 6 squares of cheese to each container.

Lastly, add one small piece of individually packaged candy to the section of the divided lunch container with the crackers. I like to use up our old candy in these. With 3 kiddos we end up with tons of candy from all of the holidays.

Step 6

Return your lids to the containers and stack in the fridge for easy packed lunches during the school year.

These save so much money. 1 box of crackers makes up to 15 homemade lunchables (with salami left over for more). That makes these less than $.50 each which is an absolute bargain. Plus, it makes it easy to customize for your kiddos with their favorite crackers and cheese. For example, my oldest loves pepperjack cheese whereas my youngest won’t touch anything but the processed American singles. No matter what you kiddos love, you can’t beat these easy homemade lunchables when it comes to budget school lunches.
