It happened again… with all of the chaos of the holidays you completely forgot about making the dish for the party tonight! Instead of dropping by the store for that container of cookies again, whip up these cheddar bacon and broccoli pinwheels. They’re quick, easy, and a sure-fire crowd pleaser!

I’ve totally been there more times than I care to admit. I’m crazy organized with my lists and planners but somehow, the big family Christmas pot luck falls through the cracks. It’s not that I forget about the event, only the cooking of the dish.

Then I run out of time and pick up something pre-made at the grocery store on the way there. I don’t know what it is about this particular task but I never seem to stick it in my brain. This year, I’m totally ready with these delicious cheddar bacon and broccoli pinwheels.

Luckily, they’re so easy to make, even if you’re not prepared (like I usually am not) you can easily whip up a batch to take with you. Even better? Everyone will absolutely love them!

Cheddar Bacon and Broccoli Pinwheels Ingredients

Step 1

First, preheat your oven to 350° Fahrenheit and line a baking sheet with parchment paper. Set your baking sheet aside.

Next, coarsely chop your broccoli florets and toss into a medium-sized mixing bowl.

Step 3

Add your sour cream, bacon bits, and shredded cheese to the mixing bowl and fold with a spatula until well-combined.

Then add in a pinch of salt and pepper and fold into the mixture. Set mixture aside.

Step 5

On a separate piece of parchment paper (or other non-stick surface) roll out one can of crescent rolls dough.

Step 6

Next, pinch the seams of the crescent dough together so that there are no seams.

Spread half of your sour cream mixture in an even layer on your crescent dough.

Then roll your dough up starting with the long edge closest to you.

Next, cut your rolled dough into 1/4 to 1/2 inch wide sections.

Step 10

Repeat steps 5 through 9 with your second can of crescent dough.

Step 11

Place your dough rolls on the parchment-lined baking sheet 2 inches apart.

Step 12

Bake for 13 minutes.

Step 13

Allow your pinwheels to cool on the baking sheet for 2 minutes and then transfer them to a cooling rack. This keeps them from falling apart when you transfer them to the rack.

While most of the world is counting down the days until they can pick up a PSL at Starbucks, I have a different pumpkin fave for the season: the Black Pumpkin Coffee from Dunkin Donuts. It’s seriously delicious even if I always get a look from the cashier when I order it black.

Even though I’m not getting a PSL, I’m still whipping up some pumpkin spice deliciousness at home. First up, surprising the kiddos with these awesome pancakes. They are totally filling and they freeze, making them a super easy hot breakfast on school mornings. Apparently they’re great frozen too because that’s how my 10 year old prefers them.

Pumpkin Pancakes and Syrup on a Plate

Pumpkin Spice Pancakes Ingredients

Step 1

First, mix all of your dry ingredients in a large mixing bowl. A whisk works best for getting the seasoning throughout.

Step 2

Next, add in your remaining ingredients and mix until thoroughly combined. I recommend using a wooden spoon for this step. You can use a whisk but it takes a lot more upper body strength than I think cooking really needs.

Step 3

Then heat a pan over medium heat. I recommend spraying it with nonstick cooking spray but that’s totally optional.

Step 4

Once your pan is heated, pour 1/3 cup of batter into your pan. Cook it on medium heat for 1.5 minutes.

Step 5

Then flip your pancake and cook for an additional 1.5 minutes.

Step 6

Transfer your finished pancake to a plate and repeat until all of your batter is cooked.

This recipe makes about 26 pancakes and 2 pancakes is a serving size.

To Freeze:

Put in gallon freezer resealable bag and store in freezer for up to 3 weeks. To heat up froze, place 2 pancakes on a microwave safe plate and microwave for 90 seconds.

Although these pumpkin spice pancakes are crazy easy and delicious, do yourself a favor and get a griddle to cook them on. I don’t have a griddle anymore and cooking one at a time takes a while. Once you get the entire batch made, they’re super quick and easy in the morning. Feeling adventurous? Give them a try frozen and save yourself a step in the morning. Maybe my kiddo’s onto something.

Easy Pumpkin Spice Pancakes

Ingredients

  • 6 Cups Pancake Mix
  • 3 tsp. Pumpkin Pie Spice Seasoning
  • 1 tsp. Ground Cinnamon
  • 15 oz Can Pureed Pumpkin
  • 3 Cups Applesauce
  • 2 Egg
  • 3 Cups 2% Milk

Instructions

  1. First, mix all of your dry ingredients in a large mixing bowl.
  2. Next, add in your remaining ingredients and mix until thoroughly combined.
  3. Then heat a pan over medium heat and spray it with cooking spray.
  4. Once your pan is heated, pour 1/3 cup of batter into your pan. Cook on medium heat for 1.5 minutes.

My mom has actually been making this for me for years because it’s a fast and simple meal that can be thrown together easily. My papa and I seriously can’t get enough of it. Even though she has always told me how easy it is to make, I never bothered doing so until now. We usually stick with a basic meal plan that doesn’t change much from month to month.

Unfortunately, as my kiddos grow, so do their very unique tastes. It was time to change it up a little so I decided to surprise them with this deliciousness. I was rewarded with cleaned plates and requests for seconds! Not bad for a mom of 3.

Since it was such a hit, I knew I had to share the recipe with you. Don’t worry about the wine in the dish. All of the alcohol cooks off when you boil the sauce. This is a totally family-friendly dish that everyone will love.

Garlic White Wine Seafood Pasta Ingredients

Step 1

First, cook your angel hair pasta according to the package directions.

While your pasta cooks, mince your garlic cloves and finely dice your red onion.

Step 3

Next, prepare your seafood by pulling the tails off of the shrimp (if desired) and roughly chopping your imitation crab meat.

Once your pasta has finished cooking, strain it and set it aside.
