It happened again… with all of the chaos of the holidays you completely forgot about making the dish for the party tonight! Instead of dropping by the store for that container of cookies again, whip up these cheddar bacon and broccoli pinwheels. They’re quick, easy, and a sure-fire crowd pleaser!

I’ve totally been there more times than I care to admit. I’m crazy organized with my lists and planners but somehow, the big family Christmas pot luck falls through the cracks. It’s not that I forget about the event, only the cooking of the dish.

Then I run out of time and pick up something pre-made at the grocery store on the way there. I don’t know what it is about this particular task but I never seem to stick it in my brain. This year, I’m totally ready with these delicious cheddar bacon and broccoli pinwheels.

Luckily, they’re so easy to make, even if you’re not prepared (like I usually am not) you can easily whip up a batch to take with you. Even better? Everyone will absolutely love them!

Cheddar Bacon and Broccoli Pinwheels Ingredients

Step 1

First, preheat your oven to 350° Fahrenheit and line a baking sheet with parchment paper. Set your baking sheet aside.

Next, coarsely chop your broccoli florets and toss into a medium-sized mixing bowl.

Step 3

Add your sour cream, bacon bits, and shredded cheese to the mixing bowl and fold with a spatula until well-combined.

Then add in a pinch of salt and pepper and fold into the mixture. Set mixture aside.

Step 5

On a separate piece of parchment paper (or other non-stick surface) roll out one can of crescent rolls dough.

Step 6

Next, pinch the seams of the crescent dough together so that there are no seams.

Spread half of your sour cream mixture in an even layer on your crescent dough.

Then roll your dough up starting with the long edge closest to you.

Next, cut your rolled dough into 1/4 to 1/2 inch wide sections.

Step 10

Repeat steps 5 through 9 with your second can of crescent dough.

Step 11

Place your dough rolls on the parchment-lined baking sheet 2 inches apart.

Bake for 13 minutes.

Step 13

Allow your pinwheels to cool on the baking sheet for 2 minutes and then transfer them to a cooling rack. This keeps them from falling apart when you transfer them to the rack.

  • 1.5 Cups Fresh Broccoli Florets
  • 8 oz. Light Sour Cream
  • 2.5 oz. Real Bacon Bits

You already know how much I adore tacos so it should come as no shock that I also love salsa. My favorite is the fresh mild salsa at Chipotle which is what inspired this delicious recipe. The freshness and crispness of that salsa… I could eat it with a spoon and this salsa is equally as good, if not better!

You’ll feel the same way about this salsa. In fact, after mixing it all together, you will sneak a taste immediately. Before you get to it, though, I want to warn you to scrubs your hands thoroughly after mixing up this deliciousness. The capsaicin from the jalepenos gets stuck under your nails if you don’t. One itchy eye later and you feel like your whole face is on fire. Don’t let that happen to you.

Fresh Homemade Salsa Ingredients

Step 1

First, dice up your tomatoes and place them in a bowl.

Step 2

Next, cut the stem off of your jalepenos and cut them in half lengthwise. Remove the seeds from the jalepenos.

Step 3

After your seeds are removed, finely dice your jalepenos and add them to the bowl with your tomatoes.

Step 4

Then peel and dice your red onion. Add it to the mixture in the bowl.

Step 5

Next, chop up your cilantro and add it to your bowl.

Top the mixture with your lime juice and a pinch of salt (if adding salt).

Serving and Storage

Serve with some crispy tortilla chips for an awesomely satisfying snack or appetizer. Store your salsa in glass jars in the fridge for up to 2 weeks (longer if you don’t mind it being a little mushy). I used pint sized jam jars but you could honestly use any jars you have on hand. You can also mix this up with some mashed avocados for some fresh guacamole in minutes. How awesome is that? Fresh deliciousness on hand when you want it.

Seriously, can you ever have enough tacos? If you didn’t answer no, I don’t know if we can be friends anymore. Just kidding… sort of.

Even if you like cream cheese, you’ll still flip for this cheesy, taco-y, melt-in-your-mouth dip! Top it with some jalapeno slices for extra spice or additional shredded cheese for the cheese lovers. Either way it’s sure to be a crowd pleaser for even your pickiest guests.

First, brown your ground turkey in a stock pot.
