Sparkly Peanut Butter Caramel Chocolate Truffles

Are you ready for a delicious and decadent dessert that will blow your guests away this New Years? You are in the right place. These sparkly peanut butter caramel chocolate truffles are rich inside and out. They are also incredibly easy to make. Only 4 ingredients topped with a dusting of gold sparkle and you have an amazing dessert to wow your guests with. Of, and did I mention that they aren’t made with cream cheese? Instead, they come packed with a mouthwatering caramel. This is great for the guests who don’t love cream cheese, like me.

Ingredients

  • Package of Peanut Butter Oreos
  • 8-10 oz. Hershey’s Caramel Topping
  • 12 oz. Semi-Sweet Chocolate Chips
  • 1 tsp. Shortening
  • Wilton Pearl Dust

Note: The pearl dust is totally optional. It doesn’t add any flavor. It just makes it shiny and pretty!

Step 1

First, crush the Oreos in your food processor.

Tip:

  • If you have a small food processor, I found it is better to do one row of Oreos at a time.

Step 2

Pour your crushed Oreos into a medium-sized mixing bowl.

Step 3

Next add your caramel to the crushed Oreos and mix thoroughly with a silicone spatula.

Step 4

Form your cookie mixture into 25 even balls and place on a silicone mat.

Tips:

  • The mixture will be very sticky so you may want to coat your hands in non-stick spray.
  • If the mixture is too loose to work with, chill it in the fridge for 30 minutes before forming your balls.

Step 5

Now freeze your balls (still on the mat) for 1 hour.

Step 6

Next, melt your chocolate chips.

Step 7

Then stir the shortening into your melted chocolate chips.

Tip:

  • This will make the chocolate coat the balls better.

Step 8

Using a fork dip your frozen balls into the chocolate to cover and then return to your silicone mat.

Step 9

Let the chocolate set before moving on.

Step 10

Lastly, brush each truffle with Wilton Pearl Dust.

Tip:

  • I brushed mine directly on but you can also mix it with a dab of almond extract for a more metallic look.

Colorful Candy Planner Sheets for Your Big Happy Planner

Have you ever created something that you love so much that you squeal like a little girl every time that you look at it? That is exactly how I feel with my newest printable. Everyone knows I’m a totally Happy Planner addict and in the beginning of 2017 I switched to the big one. Unfortunately, there aren’t a lot of accessory pages for the Big Happy Planner. That’s why I created these colorful candy planner sheets to accompany the regular planner pages. Getting them from the printer was like a birthday and Christmas present all in one!

Monthly Budget Sheets

There are 6 sections to the monthly budget sheets and they are different than any other budgeting printables you will find. The budget itself is only broken down into 2 sections. I have tried traditional budgets that are broken down into a ton of different categories. You know what? I never stick with them. You can learn more about my budget format in-depth later this month. Until then, here is how to use the different sections of this monthly budget sheet.

  • Monthly Staples
    • These are the expenses that are necessary and unchanging each month (for the most part).
    • Examples of these are your mortgage, insurance, and food.
  • Debt/Optional
    • These are the monthly expenses that you have chosen but that aren’t absolutely necessary for living and working.
    • Examples of these expenses include any outstanding debts (credit cards, loans, etcetera), subscription services, and paid television.
  • Savings
    • This section is for keeping track of your emergency savings.
    • This is not for your envelope breakdown, vacation fund, or Christmas savings.
  • Register
    • If you are not keeping a register of your account transactions, you need to start today. You cannot rely on your internet account balance.
  • Don’t Forget
    • This section will help you remember uncommon monthly expenses that only occur during certain times of the year.
    • You will also find blank lines to write in personal expenses such as anniversary plans, graduations, and more.
  • Monthly Finance Goal
    • It is always smart to readily set and view your financial goals often. This keeps it front and center each month to keep you on track.

Monthly Financial Planner

This section helps you plan your monthly finances. Start by budgeting each paycheck and then keep track of any events or expenses coming up that month.

  • Paycheck Planning
    • Write each pay date and amount at the top of this section.
    • Use the following lines to plan what expenses will be paid with each check.
  • Event Planning
    • Use this section to plan for any parties, trips, anniversary dates, and more that are happening this month.
    • Only one is included because you do not want to over-extend your budget to try to include everything you want (but don’t actually need).
  • Notes
    • The last section on the Financial Planner page is to note any anomalies for the month. This includes extra paychecks or bonuses you are expecting and unexpected expenses.

Debt Payoff Tracker

Paying off debt is definitely a priority. Keep track of where you are at in the process with these pages. List each debt and its beginning balance. Then use the remaining lines to track payments and updated balances.
