I am not a morning person. I’ve tried and although I have made progress, I’ve also come to realize that I will never thrive on mornings.

This makes school mornings challenging for me. I want to make sure my kids have a good breakfast but more often than not we resort to toaster pastries. These homemade fruit and nut instant oatmeal packets are my life saver.

My kiddos like some sweet to their oatmeal so I add some semi-sweet chocolate chips instead of adding granulated sugar. You could also sweeten it with honey but as I said, I’m not a morning person so I like to dump and go.

Fruit and Nut Instant Oatmeal Ingredients

Step 1

First pull out 12 resealable snack bags and open them.

Step 2

Next, add 1/3 cup of quick oats to each snack bag.

Step 3

Then add 1 tbsp of dry milk to each snack bag.

Step 4

Next, divide your bag of trail mix among each snack bag evenly, roughly .25 oz. per bag.

Step 5 (Optional)

Lastly, top each snack bag with 1 tbsp of semi-sweet chocolate chips.

To Cook Fruit and Nut Instant Oatmeal

Step 1

First, mix one packet of homemade instant oatmeal and 1/2 cup water in a small microwavable bowl.

Step 2

Next, microwave the oatmeal on high for 2 minutes.

Step 3

Carefully remove the bowl from the microwave, stir, and serve.

Ingredients

Step 1

In a medium pot with a lid, bring your water to a boil.

Step 2

Once your water is boiling, add you olive oil and the entire package of rice.

Step 3

Continue boiling for 1 minute, stirring the entire time.

Step 4

Next, cover your pot with the lid and reduce the heat to simmer.

Step 5

Continue cooking for 15-20 minutes.

Step 6

While your rice is cooking, strain the liquid off of your mushrooms.

Step 7

After your rice has simmered for 15-20 minutes, stir in your strained mushrooms.

Step 8

Resume simmering for another 5-10 minutes.

Step 9

Remove your pot from the heat.

Fluff the rice and serve hot.
