Quick and Easy Sausage Quiche

Mornings are hectic. Even with careful prep the night before mornings are still rough between wrangling little ones full of energy, getting the oldest ready for school, and making breakfast. Breakfast is my least favorite meal of the day and more mornings than I care to tally my kiddos get cereal. Not because I don’t like breakfast food. I totally love it. It is my least favorite because I do not function well in the morning. That is why easy breakfasts are imperative. I need meals that are fast, easy to make, and yummy. This quick and easy sausage quiche is a great hot breakfast that fits the bill. It takes about 45 minutes to make but because you can freeze it, getting a hot breakfast on the table is easy.

Ingredients

Step 1

Preheat your oven to 350º.

Step 2

Brown your sausage in a small sauce pan.

Step 3

While your sausage is cooking, whisk together your eggs, milk, salt, and butter.

Step 4

Next, mix in your cooked sausage and cheese.

Step 5

Pour the mixture into your pie crust.

Note:

  • If you are making this to freeze for later, do so at this step. See below for more tips.

Step 6

Bake your quiche for 40 minutes.

How to Freeze

I use the pre-made pie crusts already in tins for this recipe. That makes is easier to freeze without tying up my pie plates. To freeze this recipe, keep your pie crusts frozen until you have finished preparing your filling. After the filling is ready, pull out your pie crust and pour the filling into it. Place it back in the freezer for 5-10 minutes to set. Next, pull out your set quiche and place it in a re-sealable freezer bag or a Food Saver pouch. Freeze your quiche for up to 2 weeks in the re-sealable freezer bag and up to 30 days in a Food Saver pouch. When you are ready to cook it, pull out to defrost then bake as in the recipe.

Protein-Packed Freezer Breakfast Burritos

I am not a morning person.  I have tried and it just doesn’t seem to work for me.  Something happens at night and I am transformed into this super-charged go-getter that can conquer a to-do list in 8 minutes flat (or at least it feels like 8 minutes until I look at the clock and see it is well past midnight).  Come the morning, I am tired, cranky, and in desperate need of coffee.  Sound familiar to anyone?

I’ve come to accept that mornings just aren’t my thing, but that doesn’t mean that they can’t be a little bit easier.  One trick I’ve learned is to prepare a lot of breakfasts that can be made whenever you have time and then frozen for a quick morning meal.  These protein-packed freezer breakfast burritos are truly perfect; they’re healthy, tasty, and can be served in less than 2 minutes in the morning.

Ingredients

Step 1

Scramble your eggs and cook, seasoning as desired. (We just add a little salt and pepper.)

Step 2

Drain your black beans and stir into eggs.

Step 3

Fill tortillas with egg and bean mixture and sprinkle with cheese.

**If you want to eat some now, roll up your burrito and serve.

Step 4

Roll each burrito up and wrap in plastic wrap.

Step 5

Place wrapped burritos into a freezer bag and throw them in the freezer.

**Be sure to label the bag with the name and date of the food.

Step 6

To serve, place wrapped burritos on a microwave safe plate and heat for 1-2 minutes each in the microwave.  You can barely cook toaster pastries that fast and these are so much healthier.  Cheers to happier mornings!
