The Best Garlic Chicken Pasta

There are a lot of recipes out there for making meals with store bought rotisserie chickens but honestly I prefer to use bags of frozen chicken breasts in our meals.  We love rotisserie chicken but I’m lazy and hate the work of cutting and separating it for meals.  The frozen bags of chicken are super easy to bake in one big batch.  Since they are boneless and skinless, I can just cut or shred them for our recipes easily.  With school coming up soon, I’m starting a weekly series to help you create easy and quick meals using this simple staple.  First up is the best garlic chicken pasta! (Seriously, this is delicious!)

Ingredients

Step 1

Cook your noodles according to package directions.

Step 2

Cube cooked chicken breasts while pasta is cooking.  Set aside.

Step 3

Strain pasta and rinse with cold water to prevent further cooking.

Step 4

Melt one cup of butter or margarine in pot used for pasta.  Add in minced garlic, olive oil, and pepper.  Simmer for 3 minutes.

Step 5

Strain tomatoes and add to sauce along with chicken cubes.  Continue simmering for 5 minutes.

Step 6

Toss pasta with sauce and chicken until thoroughly mixed.  Divide entire dish in half and freeze one half in a freezer bag.  Serve remaining half sprinkled with mozzarella cheese (optional).

Tip:

To reheat frozen meal, empty into a microwave safe bowl and heat for 10 minutes in microwave, stirring halfway through.

This meal comes together so quickly and easily that you can have dinner on the table in minutes!  This is also a great recipe to sneak more vegetables into kiddos’ diets.  Simply puree the veggies and add them in with the sauce along with your tomatoes and chicken.  Want more easy recipes?  Check back next week for more incredible bagged chicken recipes!

4 Tips You Need to Encourage Daddy-Baby Bonding

Pregnancy sucked.  Things happened to my body that I wouldn’t wish on my worst enemy.  I will admit that I was guilty of spending pretty much 9 months wishing that baby would just get out of my incubator already.

Once my first child was born, though, something immediately snapped inside of me.  It was as though when he came out, he took a piece of me with him.  In that moment, I knew that any harm or heartbreak that came to this tiny person would bring the same to me.  I was instantly head over heels in love in a way that I had never known possible.

Then the nurses went to hand him to my husband who suddenly went rigid the instant our son was in his arms.  His look wasn’t a mirror of the tears and adoration that I felt.  It was a look of abject terror.  I was hurt and confused by my husband’s reaction, wondering how that awe and patience didn’t automatically expand his heart like in that Grinch animation.

The answer is simple, of course.  He did not (and could not) experience the intimate relationship with this beautiful baby the way that pregnancy had afforded me.  I had already felt those kicks (or in my case, contortions) and I had the privilege of experiencing those first hiccups in utero.  This is why actively encouraging daddy-baby bonding is so important once your child is born and these tips will help you get started.

This can be incredibly difficult for a new mom for a myriad of reasons.  It is biologically difficult for her to be away from the baby.  Often, moms get more (if not the only) work leave in the family and they feel guilty about “passing off” the baby to papa after work.  Also, if you are breastfeeding you feel additional obligation to constantly be your baby’s caregiver.  Here are some tips to combat these barriers:

Has your husband ever gotten a new tool or video game and then spent every free minute he has talking about it or playing with it?  Chances are you weren’t too happy about it.  Now, while obviously there is a big difference between a game and a baby, the fact remains that those hurt feelings and resentment are similar.  It may even be compounded further for him because he may feel guilty for resenting the attention you give the baby.  Making an effort to do things that show he is still number one can go a long way to help him.

Let Them Play

This is especially important if dad is nervous around such a tiny, fragile person.  Show him games he can play with the baby.  Here are some ideas if you need help:

It’s that time of year when parents are realizing that summer is ending and back to school is right around the corner. I’m a little bit of an anomaly in that I love shopping for school supplies (I know, I’m a freak)! Cruising with my cart full of cranky kids down those colorful aisles and sipping my coffee fills me with a child-like glee. If you don’t get that same thrill, don’t worry, you’re not alone. 1. Set Ground Rules Before You Go

No doubt your kids are going to want that crazy expensive talking R2D2 replica backpack.  Can you blame them?  That thing is sweet!  Oh wait, but they also need that holographic set of folders that are going to fall apart in two months, the scented markers with funny faces, and the My Little Pony glitter erases that will be lost before school even starts… Suddenly you have a cart full of hundreds of dollars’ worth of supplies!

Prevent this by letting your children know before you even head to the store what the ground rules are.  Kids always do better with clear-cut rules and expectations and it will save you a headache at the store.  Some ideas to help you are:

2. Order Technology Supplies Online

While I personally do not understand a grade school student needing a flash stick (apparently I’m old) it still appears on that set-in-stone list of school supplies.  Don’t buy these at a brick and mortar store.  You can get much better deals on things like flash sticks, headphones, etcetera at sites like Amazon.

Bonus tip:

  • For your own sanity, be sure to get a flash drive that is a keychain.  This will allow it to be clipped to their backpack or binder to help prevent it being lost.

3. Don’t Buy Into the Hype: Wait to Buy

Other than those items you plan to order online, wait until right before or right after school has started to buy their supplies.  Store always overstock school supplies items and the prices drop significantly mid to late August.  This means significant savings for you (bonus savings if your child doesn’t start school until September).

4. Prepare for Next Year Now
