As the gardening season winds down, we have fresh vegetables coming out of our ears. A lot of our friends and family have their own home gardens. That meant that even though my mom didn’t grow zucchinis this year, a friend did and gave me some of the overflow. Score! Zucchini is such a delicious vegetable that lends itself to hearty dishes that are perfect for fall. There is nothing better than gathering around the table as a family to share a warm meal. This easy and hearty zucchini and turkey pasta is the perfect comfort food to bring your family together at dinner.

Ingredients
- 2 Packets of McCormick Pork Gravy Mix
- 4 Cups of Uncooked Elbow Macaroni
- 2 Large Zucchinis (Cut into Large Chunks)
- 3 Cups of Cooked Turkey (Chopped)
- 4 tbsp. Sun Dried Tomatoes
- 2 tbsp. Lemon Pepper
- 16 oz. Container of Small Curd Cottage Cheese
- Onion Salt to Taste
Step 1
In a large pot bring water for macaroni to a boil.
Step 2
Cook gravy according to package directions in a medium sauce pan while you wait for the pasta water to boil.
Step 3
Next, add your macaroni to the boiling water.
Step 4
Boil your macaroni until cooked halfway (about 10 minutes) and add your chunks of zucchini.
Step 5
Continue cooking your zucchini and macaroni until the pasta is cooked through and strain.
Step 6
Next, add your chopped turkey, sun dried tomatoes, and lemon pepper to you gravy.
Step 7
Return your strained macaroni and zucchini to your large pot.
Step 8
Add your gravy and turkey mixture to the macaroni and zucchini and combine.
Step 9
Next, stir in your cottage cheese.
Step 10
Now add onion salt to taste.




Oh my gosh, this easy and hearty zucchini and turkey pasta is delicious! The sun dried tomatoes give it a wonderful texture as well as add a dash of sweetness. This is the perfect fall comfort food. It comes together quickly, serves 10, and warms your family’s bellies. If you don’t need to feed that many people, you can turn it into 2 dinners both done in 30 minutes!
