Meatballs are a delicious and versatile recipe that pleases the entire family. It’s no surprise that I had to pick one such recipe for this month’s Pinterest Challenge. Instead of simply trying out the recipe, though, let’s take it a step further and turn it into a yummy dinner for everyone with these delicious Crock Pot ranch BBQ meatball subs.

Don’t worry. This meal is still super easy to make. The bulk of the cooking is the meatballs. Everything else only takes minutes.
- Cooked Ranch Barbecue Meatballs
- 2 French Baguettes
- 1 Medium Red Onion, sliced
- 2 Medium Tomatoes, diced
- 2 Cups Shredded Mozzarella Cheese
Prepare your meatballs according to this recipe. Since these take the longest to cook, wait to continue making the meal until about 10 minutes before serving.
If you haven’t already, slice your onion and dice your tomatoes.
- I like these fresh but if you don’t like fresh onions, quickly sauté them in 2 tsp. olive oil until translucent.
Preheat your oven to 450° F.

Next, cut each of your baguettes lengthwise and toast them open-faced on a baking sheet for 10 minutes or until slightly browned on top.
Immediately spoon meatballs and sauce onto the toasted baguettes.
Next, top the meatballs with onions and tomatoes.
Finish of the subs with a sprinkling of cheese.
Lastly, cut each filled baguette into thirds and serve.
Voila! Now you have an easy and filling meal the whole family will love. These delicious Crock Pot ranch BBQ meatball subs are perfect for busy nights. Your total hands-on time is 15 minutes, tops.
The onions accentuate the ranch flavors in the meatballs and the tomatoes add a freshness to the warm sub. Your family will be asking you to make this easy recipe again and again.
